Prepare to think about the cannoli in a whole new way.

First step: thinking about cannoli at all.

Second step: adding booze.

Welcome to Stuffed Artisan Cannolis, a sliver of a storefront quietly focusing on the high vocation of cannoli stuffing, and only cannoli stuffing, opening Thursday on the Lower East Side.

Started by a couple of cartmongers who tested their cannoli skills in the competitive waters of Little Italy, Stuffed is the kind of single-minded bright, simple, little shop where you'll see things stuffed into a crispy little shell that you never thought would end up in a crispy little shell.

But as it so often does, it all starts with the cheese: owners Anthony and Brielle ditched their cart after spending a year tracking down the best ricotta they could find. (Naturally, it comes from a secret dairy farm in the fertile crescent of New Jersey.)

And they're putting that secret ricotta to good use with some of the most unholy, sacrilegious flavors you'll likely see anywhere: we're talking pumpkin pie, peanut butter and jelly, birthday cake, French toast, cappuccino and red licorice cannolis. Around Christmas expect eggnog and a bacon chocolate stunner.

For now, though, we'll do you one better: starting this weekend you'll be able to get a specially created White Russian cannoli just for UrbanDaddy readers.

Taking a Dive

An Underwater Tour of the Great Wall

You've heard of the Great Wall. Maybe you've even seen it. But here's a bit of wisdom you may not have known: Some parts of the wall are greater than others.

Especially the parts that happen to be underwater.

Introducing Diving the Great Wall, the first-ever organized tour of the submerged portions of the Great Wall, running missions now.

This portion of the wall has been under a lake since the 1980s, but unless you planned on ferrying a few hundred pounds of diving equipment across the border, you couldn't take it on until now. Your scuba-sherpas will suit you up, bring you to the exact spot where the wall dips underwater and guide you to its most dive-worthy parts. Once submerged, you'll stumble across a few Ming-era stone carvings, some intricate tunnels and a tight-squeeze guard tower that will require every last ounce of your Bond-like scuba ability. (Wearing your backup tux is advised.)

Over the course of the trip, you'll get two scuba-assisted dives into the Atlantis-style ruins (feel free to keep the dress semi-formal for the second) before you start the earthbound portion of the voyage, which includes a guided tour of the unrestored parts of the Forbidden City, usually off-limits to tourists.

You always knew you were special.

Not Too Shabu

Machines do excellent work.

Really, kudos to all the robots out there.

But sometimes it's better to do things by hand.

Like when a restaurant starts butchering its own rib eyes and delivering them to your table for you to cook yourself.

And as the plates loaded with meat, veggies and noodles pile up at your table, keep dipping it all in the broth to cook, then in the chili- and parsley-spiked sauce before taking a bite. Then do it all over again.
